The Michelin Guide's review
La Pampa, one of the symbols of Argentina, is a province between Buenos Aires and Patagonia. But the name "pampa" also - and especially - refers to the vast expanses that occupy the middle of the country, to the south of the capital, to the west and northwest as far as Córdoba. This is the territory of the famous gaucho. "Pampas" in the plural distinguishes between humid pampa (the easternmost) and dry pampa, semi-arid territory primarily given over to animal husbandry.
