The Michelin Guide's review
Under the patronage of Tristan Brandt, head chef Fabian Saalfeld and his team present an array of ambitious dishes. They draw together strands of both classic and regional cuisine in equal measure, also incorporating Asian influences here and there, for example in their aromatic slices of raw scallop with a spicy jalapeño cream and slivers of green apple, served with a clear broth boasting strong umami flavours. Choose between a three- to five-course surprise menu and the à la carte offer. The restaurant is located in Hotel Prätschli, which stands in a quiet location above the village, not far from the ski slope.
